A Season's End to a New Beginning

Dear members, 

This week, we welcome every member (bi-monthly and weekly) to come to the farm to pick up your final share.  Yes, we said it, the final share! Half shares will pick up a half share (bi-monthly included) and full shares will pick up a full share.


We hoped to continue harvesting for a couple more weeks, but the consistent sub-freezing temperatures have compromised the quality of our field crops. The hardiest greens, like kale and collards, are surviving well and their flavor has an enhanced sweetness. On the other hand, the tender greens, like lettuce and bok choy, have seen better days. This week, we'll be enjoying arugula and lettuce heads from the hoophouse and greenhouse. The houses have offered enough warmth and protection to provide us with a final week of gorgeous and delicious salad greens! 

 

Now that the first snow flakes have blanketed the field, one of the most common questions a farmer is asked-- time and time again-- is, "What do you do all winter?" What is unbeknownst to many is that winter, though more calm and desolate than harvest season, is the most crucial time of year for a farmer. It's a time to catch up on the paperwork that was moved to the back burner as soon as the first weeds sprouted. It's a time for tractor maintenance, field clean up, and building projects that are necessary in making next season run more fluid and efficiently. Most importantly, it's a time to plan for next season. 

Winter solstice marks a time of renewal, a representation for change and new beginnings, and a time of year when resolutions to better ourselves--in health and happiness-- take the forefront. This winter, we celebrate the end of our first season and transition to the beginning of a new one. Having developed a better understanding of the land, we are confident in our efforts to share a greater harvest. As we renew our commitment to you, we ask you ​​renew your commitment to us. TOMATIDINE: GREEN TOMATO MUSCLE BUILDER

 

Tomatidine is a phytochemical found in green tomatoes which disappears as a tomato ripens and takes on color. Recent laboratory research has demonstrated that tomatidine is a powerful stimulator of skeletal muscle growth. ETHOS GREEN TOMATO CURRY

Yield: 8 to 10 servings Preparation Time: 40 minutes

 

Ingredients:

3 lb Ethos green tomatoes

3 onions

8 oz bok choy

4 organic apples

1 pkg organic tofu

8 to 10 bay leaves

2 Tbsp curry powder

2 Tbsp lemon grass

2" ginger

Red chili (fresh or powder) to taste

14 oz can coconut milk

1 cup quinoa (cook according to package instructions)

 

Method:

Chop green tomatoes in small to medium pieces, add to large pot, cover pot and cook on medium heat. Chop onions into small pieces and add to pot. Grate ginger and add to pot. Add bay leaves, curry powder, and chilli. Sauté and mix the ingredients well. Add chopped bok choy and apple. Continue cooking for 15 to 20 minutes until all vegetables are tender. When done, turn off the heat and add coconut milk and serve the curry on quinoa.

 

Note: Bok Choy can be substituted with any greens. The curry can be served with any grains. The curry can be served as soup with addition of 2 cups of low sodium vegetable broth and by adding extra herbs/spices to taste.
